Pinterest Breakfast Recipe: Mini Frittatas

One thing that makes waking up early with a toddler worth it? Breakfast, yes…I love me some breakfast. :)

So when I saw this mini frittatas recipe on Pinterest, I drooled and then quickly got to work making my own. I ended up doubling the original recipe I found on Pinterest so I could use my 12-count muffin tin instead of a 6 count. Plus, I also wanted to freeze them and save them for breakfasts later. Just take them out and pop them in the microwave for a quick breakfast.

Mini Frittatas Recipe:

What You Will Need for 12 Mini Frittatas:

-8 eggs

-1/2 cup Half & Half

-1/2 Teaspoon Salt

-Pepper to taste

-Mix-ins (Whatever you like! I did cooked bacon, sharp cheddar cheese, parmesan cheese and red bell pepper.)

How To Assemble and Bake:

-Preheat oven to 350°

-Coat Muffin Tin with non-stick cooking spray

-Whisk eggs and half & half together.

-Add salt and pepper. Pour egg-mixture into 12-count muffin tin.

-Sprinkle in your choice of added ingredients. I did half with crumbled cooked bacon, sharp cheddar cheese and parmesan cheese. Then I did the other half with chopped red bell pepper, sharp cheddar cheese and parmesan cheese. Feel free to use whatever you have on hand.

Bake for 20-25 mins, or until mini frittatas are fluffy and the sides are golden brown. I then used a butter knife to help get them out of the pan cleanly.

Eat and enjoy! Put whatever you don’t eat into a freezer bag and then pop them into the microwave for a quick healthy breakfast whenever you like.

*Also…if you have toddlers in your household, throw your used eggshells into a bowl with soap and water. Clean them under running water and let them air dry. Then check back tomorrow for a fun sensory play activity using eggshells!

Mmm these look delicious! I’ll definitely have to pin them for later. :) I started my blog with a similar plan – to quit just pinning and start baking and creating! I set myself a 30 day challenge but only made it to 20 days in a row before life got in the way! But I’m sticking with it, just at a slower pace. I’m sure you’ll be a much more dedicated blogger than me! :)
